Charcoal grills have existed for many years, and the portable versions are simply smaller versions of the backyard models that many of us use throughout the summer. There are even disposable charcoal grills, preloaded with charcoal briquets, available in many convenience stores, particularly near recreation areas.

Most portable charcoal grills will have some sort of legs, to elevate the portable grill above the table or ground, and a grill lattice upon which to place the food. Some will have a partial shield, to protect the food and coals from the wind, and some will even have a cover, to help contain the heat, which speeds the cooking process.

Most are made from sheet metal, although some are fabricated from cast aluminum. The higher-end models are made from stainless steel. The grill lattice itself may be plain steel or stainless steel, and the best are ceramic coated.

Self-proclaimed grilling “purists” typically hold those that use gas or electric grills in disdain. Gas grills, they say, impart a fuel flavor to the food, while electric grills tend to dry food out, and don’t draw out the natural flavor like a good charcoal grill. They will often use flavorful woodchips on their coals, such as hickory or applewood, to add accent flavor. They will grill standard fare, such as steaks, burgers and hotdogs, they will bake and fry, they will undertake virtually any task that can be accomplished with a conventional stove, often with amazing success.

If you don’t mind getting a bit of charcoal on your fingers while setting up, and you can live with having to deal with the hot coals and ashes after the food is finished, then a portable charcoal grill may be just the ticket, to add a spark of magic and nostalgia to your picnic or a day at the beach.
